Crispy Chicken Sandwich

I’ve eaten a lot of chicken sandwiches in my life, and honestly, too many of them were all crunch and no flavor. So I set out to make the kind of sandwich that hits every single note—crispy, juicy, salty, tangy, sweet, and messy in the best possible way. The chicken gets brined so the flavor goes all the way through, then fried until golden and crunchy before getting stacked on a toasted bun with sauce, pickles, and slaw. This is the kind of sandwich that makes you pause after the first bite just to appreciate what’s happening.

Ultra crispy fried chicken stacked on a toasted bun with creamy sauce, crunchy slaw, pickles, and sweet heat for the ultimate homemade chicken sandwich experience.

  1. 1.Brine the Chicken
  2. 2.In a large bowl, combine the water, salt, sugar, onion powder, and garlic powder. Stir until dissolved. Add the chicken and let it brine for at least 1 hour in the refrigerator.
  3. 3.Prep the Coating
  4. 4.In one bowl, whisk together the eggs and milk. In another bowl, combine flour, paprika, black pepper, and salt.
  5. 5.Bread the Chicken
  6. 6.Remove the chicken from the brine and pat lightly dry. Dip each piece into the flour, then egg mixture, then back into the flour for a craggy, crispy coating.
  7. 7.Fry Until Crispy
  8. 8.Heat oil to 350°F in a deep skillet or pot. Fry the chicken for 6–8 minutes per side until deep golden brown and fully cooked through. Transfer to a wire rack to rest.
  9. 9.Toast the Buns
  10. 10.Lightly toast the brioche buns until golden.
  11. 11.Build the Sandwich
  12. 12.Spread sauce on the buns, then layer with slaw, pickles, and crispy chicken. Finish with a drizzle of hot sauce or sweet chili sauce.
  13. 13.Serve
  14. 14.Serve immediately while the chicken is hot and crunchy. Napkins are highly recommended.
