  2. 2.Heat oil in a large skillet over medium-high heat. Add diced potatoes, season with salt and pepper, and cook for 8–10 minutes until golden and tender. Remove and set aside.

  4. 4.In the same pan, add andouille sausage. Let it sear and render its fat, allowing that flavor to build. Cook until browned and fully cooked. Remove and set aside.
