Carmine’s Chocolate Bread Pudding

See Video

This is that old-school Italian-American dessert—born in a Brooklyn kitchen, built on tradition, and upgraded with chocolate. It’s cozy, indulgent, and even better the next day (if it lasts that long).

Carmine’s Chocolate Bread Pudding

Directions

Rich, custardy bread pudding layered with chocolate and raisins, baked until golden and finished with a soft, decadent center.

  1. 1.Soak the raisins:
  2. 2.Place raisins in a bowl, cover with water, and soak for about 1 hour. Drain and set aside.
  3. 3.Make the custard:
  4. 4.In a large bowl, whisk together eggs, heavy cream, sugar, vanilla, and cinnamon until smooth.
  5. 5.Prep the bread:
  6. 6.Cut bread into thick pieces and lightly toast if soft. While still warm, spread butter on both sides.
  7. 7.Layer the pudding:
  8. 8.In a buttered loaf or baking dish, layer bread, raisins, and chocolate. Repeat until all ingredients are used, finishing with raisins and chocolate on top.
  9. 9.Add the custard:
  10. 10.Pour custard evenly over the bread. Press down gently so everything soaks through.
  11. 11.Chill:
  12. 12.Cover and refrigerate for at least 2 hours (overnight is best).
  13. 13.Bake:
  14. 14.Preheat oven to 350°F. Place the dish in a larger pan and add hot water halfway up the sides (water bath). Cover with foil and bake for about 1½ hours until set.
  15. 15.Cool and serve:
  16. 16.Let cool for at least 1 hour. Slice and serve with whipped cream or ice cream.
