Korean BBQ Sliders with Korean-Style Au Jus

These sliders take the comfort of a classic French dip and give it a bold Korean BBQ twist. The beef is coated in a sticky, garlicky glaze with hints of sesame and ginger, then baked into soft buttery rolls until perfectly melty. The Korean-style au jus ties everything together with deep umami flavor and just enough sweetness to keep you going back for another dip.

Directions

Sweet, savory Korean BBQ beef piled onto buttery slider rolls with melty cheese and served with a rich soy-garlic au jus for dipping.

  1. 1.In a bowl, combine soy sauce, brown sugar, sesame oil, garlic, ginger, gochujang, rice vinegar, and black pepper. Add sliced beef and marinate 20–30 minutes.
  2. 2.Heat a large skillet over medium-high heat. Cook beef in batches until caramelized and cooked through, about 3–4 minutes per batch.
  3. 3.Preheat oven to 350°F. Slice slider rolls in half horizontally and place the bottom half into a greased baking dish.
  4. 4.Layer cheese over the rolls, then pile on the Korean BBQ beef evenly. Add another layer of cheese if desired and place the top buns on.
  5. 5.Mix melted butter with garlic powder and brush over the tops of the rolls. Sprinkle with sesame seeds.
  6. 6.Cover loosely with foil and bake for 15 minutes. Remove foil and bake another 8–10 minutes until golden and melty.
  7. 7.While sliders bake, combine all au jus ingredients in a saucepan. Simmer over medium-low heat for 10–15 minutes until flavorful and aromatic.
  8. 8.Remove sliders from oven and top with sliced green onions.
  9. 9.Slice and serve hot with warm Korean-style au jus for dipping.
