Directions

Fluffy, golden fried dough stuffed with rich, spiced curry mince—comforting, bold, and deeply satisfying with every bite.

  1. 1.Make the dough:
  2. 2.In a large bowl, combine flour, yeast, sugar, and salt. Add warm water and mix until a soft, slightly sticky dough forms.
  3. 3.Knead and rise:
  4. 4.Knead the dough for 8–10 minutes until smooth and elastic. Cover and let rise in a warm place for about 1 hour, or until doubled in size.
  5. 5.Shape the vetkoek:
  6. 6.Punch down the dough and divide into 8–10 equal portions. Shape into balls and place on a floured surface. Cover and let rest for 10–15 minutes.
  7. 7.Fry the vetkoek:
  8. 8.Heat oil to 350°F (175°C). Fry dough balls in batches for 3–4 minutes per side until deep golden brown and cooked through. Remove and drain on paper towels.
  9. 9.Build the curry base:
  10. 10.In a large pan, heat oil over medium heat. Sauté onion for 6–8 minutes until soft and lightly golden. Add garlic and ginger and cook for 30 seconds.
  11. 11.Toast the spices:
  12. 12.Add curry powder, cumin, coriander, turmeric, and paprika. Stir and cook for 1 minute until fragrant.
  13. 13.Brown the mince:
  14. 14.Add ground meat, breaking it apart as it cooks. Cook until browned and crumbly.
  15. 15.Simmer the curry:
  16. 16.Stir in potato, carrot, tomato paste, stock, sugar or jam, salt, pepper, and optional chili. Bring to a gentle simmer.
  17. 17.Cook until thick:
  18. 18.Cover and cook for 15–20 minutes, stirring occasionally, until potatoes are tender and the sauce is thick—not watery.
  19. 19.Finish the filling:
  20. 20.Taste and adjust seasoning. Stir in fresh herbs if using.
  21. 21.Assemble and serve:
  22. 22.Slice open warm vetkoek and generously fill with curry mince. Serve immediately.
