West African Suya (Beef & Chicken Skewers)

Directions

Smoky, spicy, peanut-coated skewers of beef and chicken grilled to perfection—Nigeria’s iconic street food packed with bold, nutty heat.

  1. 1.Make the suya spice:
  2. 2.In a bowl, mix ground ginger, garlic powder, onion powder, cayenne, salt, and paprika. Set aside.
  3. 3.Blend the marinade:
  4. 4.In a food processor, combine garlic, ginger, oil, and roasted peanuts. Blend into a thick paste.
  5. 5.Season the meat:
  6. 6.Add beef and chicken to a bowl. Toss with the peanut mixture, then coat generously with suya spice blend.
  7. 7.Marinate:
  8. 8.Cover and refrigerate for at least 1 hour (overnight for deeper flavor).
  9. 9.Skewer the meat:
  10. 10.Thread beef slices and chicken pieces onto skewers, keeping them tight for even cooking.
  11. 11.Grill to perfection:
  12. 12.Preheat grill or pan to high heat. Cook skewers for 4–6 minutes per side until charred and cooked through.
  13. 13.Build that crust:
  14. 14.During the last minute, sprinkle extra suya spice over the skewers and lightly brush with oil for that signature finish.
  15. 15.Rest and serve:
  16. 16.Remove from heat and let rest briefly.
  17. 17.Plate it up:
  18. 18.Serve hot with shredded cabbage, sliced onions, cherry tomatoes, and warm flatbread.
